Blue Plate Shrimp Gumbo 1 green pepper
1 med. onion
3 tbsp. flour
1 tsp. salt
1/4 tsp. black pepper
1 qt. tomatoes with juice
2 c. okra
1/2 c. hot water
2 cans Blue Plate shrimp (salad size)
Mince green pepper and onion and brown lightly in butter. Add the flour and seasonings, stir to avoid sticking. Gradually add tomatoes, okra and water. Slowly bring to boil; add shrimp and reduce heat and simmer for 20 minutes. Serve over steamed rice. Serves 6.
